Basically, simply put: GS Uninfused: Emphasis on physical damage, consistent and reliable. Can be buffed with resins and spells. GS Elementally infused: Reduced physical damage, increased overall AR with elemental damage, less consistent and reliable but will be worthwhile when striking versus weakness with a buff on it.Greatsword, imo, is the best one. People do rant abs race about the Fume UGS but it has its downsides, lack of horizontal swing (from neutral) Zwei is actually decent and weighs alot less with a slightly different but more useful moveset. Drakekeepers UGS is the best looking one by far. It's basically a meatier Zwei with a focus in STR (S)I think I'm SL 40 or so with about 23 STR and 20 DEX at the moment. Claymore is easily the best greatsword in the game, though it only truly shines over the Black Knight Sword when you have high stats (go for 27 str, 40 dex) and the sword is +15.

In my experience the greatsword is the best because it gets a S strength scaling, has a good moveset, is acquirable early, and upgrades with normal titanite. I also would avoid the FUGS for a pure str build because it requires 30 dex to use.
